Friday Dance Party – Bon Jovi’s ‘Wanted Dead Or Alive’

Guess what?  It is time for another edition of Friday Dance Party on Acorns On Glen.  It’s the time where we give thanks for making it through another week and for being alive and present here on Earth.  How do we celebrate another week of living?  We dance.  So, are you alive this Friday?  Are you and your family safe and sound?  Take a few seconds now to be in the moment and realize what a great life you truly have.  Did you give thanks for that?

Do you ever have one of those weeks that seem to fly by?  So fast that it is almost a blur.  You know you went through it, but you don’t remember much about it.  Well, this seems to be the week that I’ve had.  I’ve been working a lot and so that has left little time to do other, more exciting things.  Who would have thought that the woodchuck trapping adventure would be the highlight of my week?  It seems for a while that all I was doing was running a 24-hour woodchuck reporting network.  I was so crazed to catch that animal and save my garden!  One part of the story I didn’t write about yet was that every time I went out to deal with the trap I hummed or sang Bon Jovi’s ‘Wanted Dead or Alive’ under my breath.  The song just seemed to get me into the proper mindset for the work that had to be done.  Funny how I feel bad now about removing the animal from our property.  It’s like the universe is going to hunt me down or something for upsetting the cosmic pecking order of things in the environment.  So here’s to the woodchuck and all the excitement that he caused.  Yes, the woodchuck was ‘Wanted – Dead or Alive’.  Glad the alive part worked out for him.  Glad the week worked out for us.  Another one down and we made it through.  Let’s celebrate and dance to my personal ode to the varmint, Bon Jovi’s ‘Wanted Dead or Alive’.  I’ve always liked this song and the video with the big hair from the ’80s brings back a lot of old memories.  Honestly, I kind of miss that big-haired rocker look.  Do you?  Have fun dancing!

We’re Back – Random Thoughts And Shots From Las Vegas

I know that what happens in Vegas is supposed to stay in Vegas, but I won’t give too much away from our trip.  As usual, the weather was hot and so was the Strip.  Lots of great food, some wild cocktails, a trip to see Celine, some shopping and lots of gambling has to add up to a great time and this trip was no exception.  Turn up Elvis and enjoy my random thoughts and shots from our trip.  It’s good to be home, but Viva Las Vegas!!

A Happy Father’s Day Wish To All The Dads Out There

All of us here at Acorns On Glen want all the Fathers out there to have the absolute best day possible.  This is the first Father’s Day since my Dad passed away and so now, more than ever, I want everyone to realize the importance of calling up your Father and saying “I love you”.  Such simple words to mutter, but so important for your Father to hear.  So here’s to the all the Dads out there.  May each of you understand how important you are in your children’s life and how much you are loved.  Tell us, how are YOU going to celebrate?

Friday Dance Party – Alex Clare’s Too Close

It’s graduation time everywhere I turn here in Connecticut.  When I was little, families only celebrated when you graduated from high school.  Today, we are going to parties to celebrate graduations from elementary school, junior high school and high school.  I guess the more parties the better, right?  While I like to go to a graduation party, I have always tried my hardest to get out of times where I was invited to go to the actual graduation ceremony.  I find them extremely boring…..really, so boring they are painful.  The truth be told, I find them so boring that I didn’t even attend my own college graduation.  I had the college send me my diploma and instead of going to my own ceremony, I enjoyed a long vacation in New York.  I think I don’t like the ceremony because of the speakers that are there to encourage the youth.  I have always cringed at the speakers that are chosen for graduation ceremonies.  What really can these speakers say to the young ones that is not cliché and something we’ve heard a thousand times.  Unless you can nab Obama or Oprah to speak at your graduation, you should just skip it in my opinion.

I say all this about graduation speakers and their weak speeches and then I kind of do the same thing this week.  Someone at work asked me what advice I would give to a young employee and I said without hesitation one of the oldest pieces of graduation advice ever given:  “never give up”.  Even though it’s true, it is a lame piece of advice.  I’ve been in the working world over 25 years and this is the best I can do?  I guess I understand why I’ve never given a graduation speech.  So my piece of advice, in all its wisdom, is why this week we are listening to Alex Clare’s song ‘Too Close’.  The actual song and the album it was on bombed when it was released in 2011.  Fast forward to now and have the song used on an Internet Explorer commercial and you come back with an instant hit.  Just goes to show you to “never give up” and you can have a hit with whatever it is that you do in life.  I’m a prophet!  So enjoy the song and dance while listening to it.  You made it through another week…you deserve it.

Friday Dance Party – Back Again

I just looked up the last time I posted something here on Acorns On Glen and I can’t believe that it has been close to three months ago.  A year ago, I was posting stories (sometimes almost daily) about my life here in Connecticut and now I am posting nothing.  From cooking and gardening stories to absolutely nothing.  I just haven’t felt like it.  I just haven’t had the energy.  You see, I lost my father on April 12.  You may remember that I briefly wrote about it during the holidays.  The days leading up to his leaving and all these days after have been some of the hardest of my 48 years.  I think I have learned a lot about myself during these days of despair.  I know that I have faith.  I have never really been a religious man.  Don’t get me wrong, I have always believed in a power bigger than me.  I think it’s God, but whatever you want to call it is fine by me.  But the belief that there is someone or something up there for me to talk to as well as someone or someplace up there for my father to go to has been very comforting to me over the last few months.

I have also discovered from the ‘most played’ feature on my iPad, that I have listened to the same group of songs over and over during the last few months.  Songs of inspiration, understanding, hope and faith.  The one I chose for today is the one that I listened to the most.  Sometimes it made me think about myself and sometimes it made me think of my father and his battle against cancer.  I’m just glad I found it.

I think my father left us in Spring so that there would be so much for us to do after he was gone.  We’d get on with our lives in a quick manner because there would be gardens to plant, yards to be mowed and flowers to watch bloom.  He wouldn’t want us to be sad for very long and he would want us to quickly get back to living our lives to the fullest without him, just like we did when he was here.  So guess what?  Like I’ve done for so many Fridays here on Acorns On Glen:

Christmas Cookie #4 – Cashew Brittle (Not A Cookie, But We Can Pretend)

This brittle has always been a Christmas staple in my household.  I can remember my mom making this brittle as a very young child.  It’s funny about old memories.  My memory of my mom making brittle is as clear as it was when I was actually watching her.  I can remember what the pan looked like that she used, I can remember the exact spoon and even what the candy thermometer looked like.  I can also remember eating pounds of it, including it at breakfast, lunch and dinner.  Over time, I have taken her recipe and made some modifications.  The biggest one is that I replaced peanuts with whole cashews.  The cashews give the brittle a little more crunch and a little bit more creaminess.  I also try to eat only a few pieces now versus half the container like I used to do when I was a kid.  One thing I haven’t changed from my mom’s recipe is that I try to stretch the brittle as thin as possible.  It is a lot more delicious when your pieces are thin versus thick.  Here’s how we made the cashew brittle this year:

Ingredients:

  • 1 tablespoon unsalted butter, plus more for pan
  • 2 1/2 cups salted, roasted cashews
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 tablespoon baking soda

Directions:

Butter a large baking pan; set aside.  Combine cashews, sugar and corn syrup in a medium saucepan.  Set over medium-high heat and bring to a boil, stirring constantly.

Insert a candy thermometer.  Continue boiling, without stirring, until temperature registers 295 degrees, about 6 minutes.  When sugar begins to brown, stir nuts gently to ensure even cooking.  Remove saucepan from heat, and stir in the butter and baking soda; the mixture will begin to foam up, so mix quickly.  Pour onto the prepared baking pan.

As soon as the brittle is cool enough to handle, use your fingers to stretch the brittle as thinly as possible over the baking pan.

Allow the brittle to cool completely, about 45 minutes, then break into bite-size pieces.

This cashew brittle is salty-sweet perfection.  Be careful though, it can become addictive.  You won’t be able to stop eating it once you start.  I like this brittle as well for all the memories it has brought me through the years.  It’s nice to include something in your Christmas cookie collection that reminds you of Christmas past.  So there you have it.  Our Christmas cookie and treat selection for 2011.  I love how the flavors are all unique and stand up well on their own, but also how they complement each other when you make a tin up for a friend.  Coconut pyramids that look like little modern pieces of art, the long biscotti with its red cranberries and green pistachios in the mix, the pretty cookie press cookies that are too cute to eat and the salty-sweet cashew brittle.  The four of these really make a nice little treat for Santa, but better than that, for you and your family to enjoy over the Christmas holiday.  Thanks for baking with us!  Do you and your family eat all of your Christmas baked goods or do you share them with other family and friends too?

Our Hotel In Charleston – The Planters Inn

This is our hotel in Charleston.  Since we are still thick in our Charleston, South Carolina vacation review, it is only right that we discuss where we stayed while in the great city.  The Planters Inn, located in Charleston’s historic district, is a gracious Charleston hotel known for elegance and Southern hospitality.  Built in 1844, this beautifully restored inn is situated on Charleston’s open-air City Market, the King Street Antiques District is only a block away and Fort Sumter tours are within a half-mile.

The inn has beautiful four poster beds in each room.  Unlike other hotels, there is no real lobby area in the hotel.  Instead, there is a small desk that is off of a parlor area that is decorated with period pieces that make you feel like you are back in older times.  Here are some pictures of the hotel that illustrate the charm of the Planters Inn.

Besides its beauty, it was nice staying at the Planters Inn because it was close to everything that we did while in Charleston.  Its proximity to tourist attractions, great restaurants and shopping can’t be beat.  After walking outside in the heat, it wa great to come back to the parlor or your room and just relax.  Even though the inn is in the heart of the city, it was always very quiet and accomodating.  We were glad we stayed at the Planters Inn.  What great things, like the Planters Inn, have you discovered over the Summer?

Charleston’s Hominy Grill Restaurant – Yum!

This is one of the first things you see when you arrive at the Hominy Grill in Charleston, South Carolina.  Painted on the side of the building, this waitress seems to assure you that inside you will soon be eating some great home-cooked food just like your Grandma used to make.  Nationally acclaimed and locally beloved, the Hominy Grill is a Charleston institution serving classic Southern specialties.  No cans are opened at the Hominy Grill.  All of the food is prepared from scratch with fresh, locally raised ingredients.  Chef/proprietor Robert Stehling first learned to cook at Crook’s Corner in Chapel Hill, NC.  He then worked for several years in New York before moving to Charleston where he opened the Hominy Grill.  He received the prestigious James Beard Best Chef Southeast award in 2008.

When we first arrived, we knew we would have a little wait given the number of people who were outside on the patio already waiting for a table.  Given the gorgeous weather that Charleston is known for, waiting outside for our table was nice.  Although there wasn’t a bar to stand at, the Hominy Grill does have a window where you can go up to and order whatever it is you would like to drink during your wait.

After about thirty minutes, it was our turn to eat.  The six of us sat down at a table inside a nice bright room with what appears to be an old-fashioned stamped tin ceiling.

Next up, it was time to read the regular menu and review the daily board of specials.  Almost of the dishes offered were Southern classics made with fresh ingredients.  Right off, we knew that we would hit all three courses in our eating adventure–appetizers, main course and dessert.

We started off with fried green tomatoes with ranch dressing for the entire table.  Is there anything more Southern than that?  Did you know that there is not a special variety of green tomato that you grow to use when you make your fried green tomatoes?  You just need to gather unripened, green tomatoes off the vine and batter and fry them.

After polishing off the fried green tomatoes in record time, it was time to move on to the main course.  Take a look at this delicious dish of shrimp and grits, another Southern classic.  The shrimp was sautéed with mushrooms, scallions and bacon and then served over cheese grits.  In this dish, the bacon actually gave the dish a nice smoky and salty flavor when up against the smoothness of the grits and the tender shrimp.

What would the South be without something fried and then served with gravy and a biscuit?  The Hominy Grill did not disappoint and several of us ate the Big Nasty Biscuit with a fried chicken breast smothered in cheddar and sausage gravy.  When we saw this, all we could do is trick ourselves into thinking it only had 200 calories in it and then dig in.  Talk about some good eating!

BBQ was also on order at the Hominy Grill.  Southern barbeque is more vinegar based than other barbeques that you may have eaten.  I like the bite that this type of barbeque offers.  Here is the BBQ chicken sandwich with slaw.  Vinegar BBQ heaven!

Are you ready for dessert?  We were.  We kept it simple and delicious as you can see.  Nothing light about butterscotch pie and a chocolate brownie with vanilla ice cream, huh?  The butterscotch pie was creamy and delicious.  It has been quite a while since I had eaten butterscotch pie and this was a light and flavorful treat.

Now onto the chocolate brownie with homemade vanilla ice cream.  Here’s the question–have you ever met a brownie a la mode that you didn’t like?  I haven’t and the Hominy Grill’s selection was as good as it looks in this picture.

What a great brunch!  At this point in a meal and after all of this food, all you can do is either go back to home base and take a long nap or walk it off.  We thought it best to do some walking which is probably the right choice after you just finished devouring something called the Big Nasty Biscuit.

When we go on vacation, we do some sight-seeing, but for the most part our favorite part of a vacation trip is getting to know the locals through eating.  The Hominy Grill in Charleston really got us acquainted with the food of South Carolina’s low country.  Given that they try to utilize fresh and local ingredients, the food was really delicious.  We hope you enjoyed our little eating frenzy at the Hominy Grill….we sure did.  Do you enjoy dining out a lot when you are on vacation?

A Picture Is Worth A Thousand Words – Brook, You Just Keep Babbling

This is our neighborhood babbling brook.  Glen Road has taken on a strict diet and exercise plan starting last Monday.  Healthy eating and several walks per week is the charge.  If you notice our food posts, most are desserts, so it is time to work a few of those calories off.  Most nights this week, we put on our sneakers and put JoJo on a leash and we take off for a 45 minute walk.  Yes, even JoJo has indulged a little too much this Summer and needs to lose a few pounds as well.  What has been great about these outdoor walks versus walking on a treadmill inside of a gym is that you can really take notice of all the cool things nature has to offer.  Like this little brook.  We’ve driven over the small bridge that is on top of it for six years, but we have never really stopped and looked at the water that flows through it.  We’ve never listened to the babbling water rushing around rocks and tree trunks.  We’ve never really taken a look at all of the brook’s bends and turns.  Our walks started for the exercise, but now have also gotten us closer to nature.  Who would have thought?  We never thought we would like to exercise, but this seems to work.  What do you notice when you take a walk around your neighborhood?
